Norwegian Flat Bread (LEFSE)

1/2 cupWater125 ml
1 tspSalt5 mL
3 cupsPotatoes750 mL
1 TbspShortening15 mL
1 cupFlour250 mL




Directions
Boil potatoes until soft and put through a potato ricer.

Combine mashed potatoes with shortening.

Let stand in a covered pot overnight.

Add salt and 1/2 cup flour to potato mixture.

Mix with hands, add water and another 1/2 cup flour.

Roll out very thin and bake on a hot griddle.

The flat bread will bubble.
Turn over once and bake the other side.

Eat with butter and sugar!
