Meal in a PEI Potato

1/2 cupchopped onion125ml
1garlic clove, minced1
1/4 cupfinely diced celery50ml
2 tbspbutter 25ml
1 lbsirloin steak, thinly sliced450g
2 tbspwater25ml
2 tbspapple juice or white wine or beef stock25ml
4baked PEI Russet potatoes4
1 tspdry mustard5ml
1/2 cupsnow peas or broccoli florets125ml
1 tspcornstarch5ml
1/2 cupcoarsely chopped red pepper125ml
2 cupssliced mushrooms500ml




Directions
Saute mushrooms, celery, onions, red pepper and garlic in butter in large frying pan, 2-3 minutes.

Stir in steak and saute until tender. Add snow peas or broccoli. Stir and cook 2 minutes; add remaining ingredients. Cook and stir until heated. Cut baked potato in quarters, lengthwise. Spoon vegetables and meat over potatoes.
